Mmm… I’m in the mood for Korean food.
So into it… that I decided too make my own.
Something soupy… something easy!
Cause cooking for one self, things just got to be fast, easy and effortless!
Korean Kimchi Beef Soup with Enoki Mushroom it is!!
Prep Time: 10 minutes
Cook Time: 15 minutes
Serves: 1 – 2 person
Ingrediants:
1/8 chinese cabbage or nappa cabbage, washed and cut
1 packet enoki mushrooms, stalks removed and pulled apart
1/2 cup of jarred kimchi
1/2 onion, thinly sliced
500ml beef or vegetable stock
10 pieces pre-sliced ‘shabu shabu’ beef meat
1 tablespoon oil
salt and pepper to taste
Instructions:
1) In a pot, heat oil on medium heat and sautee onion until brown and fragrant.
2) Add in kimchi and continue to sautee for another 2 mins.
3) Add in beef stock and chinese cabbage and bring to a boil. Once boil, reduce heat, cover and allow dish to simmer for 5 mins.
4) Uncover, add in enoki mushrooms and then taste and adjust seasoning (salt and pepper) based on personal preference.
5) Bring dish to a boil and add in pre-sliced ‘shabu shabu’ beef meat and gently swish beef gently back and forth in the boiling soup until it changes color (10 – 20 sec)*.
6) Switch off fire and serve soup in a bowl immediately.
*Note:
I personally prefer beef to be medium-cooked. The moment I add in the sliced beef inside, I would switch off the fire and then gently swish beef back and forth as beef will still continue to cook in the hot soup.
I always find pasta is something that I can prepare in the shortest time.
I am lazy, and it is the fastest and most versatile dish in my opinion.
Most of the time, I just use what I can find in my fridge and prepare different variety depending what I can find at that point in time.

Serves: 1 person
Ingrediants:
8 – 10 pieces popcorn chicken (frozen packed)
1 bunch of spaghetti (I usually measure using the hole of a 500ml empty mineral water bottle)
3 button mushroom
1/2 onion, diced
3 tablespoon oil
2 tablespoon of soy sauce
salt and pepper to taste
Instructions:
1) In a pot, add water, 1 tablespoon of oil, some salt and boil spaghetti for 10mins.
2) On the other hand, add 1 tablespoon of oil and pan fry the popcorn chicken till golden brown in medium fire. Set aside popcorn chicken once ready.
3) Using the same pan, add 1 tablespoon of oil and diced onion in and stir fry till fragrant. Add in mushrooms and sauté or 2 mins and season with soy sauce and pepper.
4) Drain spaghetti and toss it to the pan and stir fry together with mushrooms and onions.
5) Add in the pan friend popcorn chicken earlier and give it a good stir.
6) Cook for 2mins and prepare to serve.
The main reason why I love Chinese New Year the most, is a great get together with my parents and of course, the joy of eating my mummy’s delicious homecook food.
In my opinion, my mum and dad is really a good cook. Hehe… and as much as I try to learn, I still can’t seems to achieve the taste of my mum’s cooking. What’s weird is, my mum doesn’t really like to cook. *haha* and yet, she can cook such superb dishes. So imagine if my mum enjoys cooking, think she will cook more amazing dishes!
Oh yeah, aside from those yummy cooking, I enjoy to see how the dishes are being served on the Chinese New Year cutleries whereby my mum will only use it once a year.
*burp* *rub tummy* I feel full and heavy! 😐
It’s been really long since I mess the kitchen! Guess my mum will say thank god. Cause the cleaning up process takes longer hours than preparing the food! *LOL* 😀
Well, in my opinion… I think cooking is not as hard as it seems. I think it’s way easier than cleaning up! Haha… which is ironically, me and my mum can partner very well… cause she prefer cleaning to cooking!
So, one fine weekend… I decided to cook for my parents! Which seriously shocked them, since I never cook for quite some time 🙂 . The Stuffed Tomatoes with Cheese Tofu and Bacon was new recipe which I adapt and alter from some chinese cook show! I thought it tasted ok only. Hemm… added too much water which affects the reduction! And I think this dish screams “more cheese please!!”
Mmm… as for the Stuffed Mushroom, well that was easy-peasy and I guess it’s been done by gazillion people! So… yahoo!!! Mum say it was perfect! Ok ok… I made that up. She said it was yummy. Dad was speechless. He say not complaining means it taste good.
Yeay! Mooncake Festival is around the corner and I’ve decided to make my own jelly mooncake. Yup, fruity jelly mooncake! Jelly mooncake stuffed with kiwis and lychee.
Mmmm… I’m gonna make more, hehe… this time, I’ll make different flavours! Probably with ice cream too! Then again… still wondering how to prevent the ice cream from melting! Hemmmm…..
Valentine’s Day, may be overrated. I personally think so too.
While I like the fact that it’s a day where couples get to celebrate and treat your other half to something special, but I’m sure we can always do that every other day.
But what I hate was the fact that it was monetized to the point eating out is getting so expensive and taste horrible, since they only offer preset dinner sets. And not forgetting super expensive bouquet of flowers.
I could re-call our first Valentine’s where we dine in Thai restaurant, cause most were busy with steak and wine. And seems for some odd reason, most of our celebrations are were celebrated in Thai restaurants.
This year, we decided to cook at home. While he may not be the type that goes in to the kitchen, it’s nice of him to decide to cook. A simple Spaghetti Cabonara with Campbell Chicken Soup and Sparkling Juice is good enough to make me happy.
I got this super big pressent ! Something that I like.
Guess what is that? Yes! A Grab-It Machine
Something that I wanted for the longest time.
Now is the chance for me to practice grabbing toys .
Best part – there’s a lot of small cute phone danggler toys inside for me to grab.
Next time I should try put in different things like sweets and candy too!

1 loaf sandwich bread
1 packet Mozarella cheese
6 pieces Chicken Salami
6 pieces Chicken Pepper Sarami
Deon is in the mood to make me a sandwich for supper while we were shopping around Giant Hypermart the other day. I guess that has gotta do with us walking around the meat section too much. So yup, we decided to add more pounds to our weight and started to shop. Deon starts picking up on things that he want to make his “secret recipe” sandwich, the Cheeezy Salami Sandwich. Yup, the name itself makes me look forward to taste it. Hehe…
While Deon is busy making the sandwiches, I manage to take loads of pictures and make him pose for me. Hehe… this is seriously one cheeeeeeeeeeezy Salami Sandwich… with loads of cheeeze oozing out. Thank god the cheese isn’t as salty as I thought it would be. And yes, Chicken Salami rocks!!! *rubs tummy*

Haha… it’s really nice to know that you can wake up to food. Yup, ready made food and the best part is… it’s home cook food. Yeah, my sister invited me over to her place for dinner. So yeah, I practically sleep my weekend away and wake up good enough for dinner.
Yeah… everyone have some contribution to it. My sister apparently made the mashed potatoes. I know I shouldn’t complain… but I think it would be better if it is not that dry.
As for me… my job is just to be a lazy pig. All I was required to do is buy some lemang and rendang while on the way to their home. Haha…
My “brother-in-law”, Jason is the chef of the day. He cooked lamb chop with sauteed mushroom. No kidding… it even comes with this nicely done salad. The food tasted so good… I didn’t have space to chow down any of the lemang. Yeah, Jason is a good cook and I must say, my pictures didn’t do his cooking justice.
I couldn’t really care to take more pics coz I am seriously hungry. This is after all my first meal of the day.
Backdated post. Actual event took place on 18 November 2006. Ah…. such a beautiful name… Evening Hours is a little name Brian thought of for our little cooking project. So yes, in future… if there is anything listed with the word Evening Hours, it’s surely something to do with cooking. Not to forget to credit the logo was done by Gigi. We headed to Brian’s house. Yes.. since he have a big place, equipted kitchen and cozy environment.. we figure why put those stuff to waste. Brian had to work and so after work he and Gigi went shopping for stuff. As for me, I have stuff to do as well hence I just pass my list of ingrediant to Gigi so she could buy for me as well. Oh yeah.. did I not mention… everyone have to cook one dish? Ah.. yes.. that is the tricky part. Jon and June was rather busy hence we sorta allow them to buy something and share instead of them cooking. Since they are going to be late, we decided that we should start preparing the food first. When I arrive at Brian’s house, Gigi is already busy cutting up meat, tomatoes, mushroom. Yeah… Gigi is gonna cook spagetthi for all of us. Wooo hooo… yummie yummie. As for me… I will cook Pork Rib in Orange Sauce. I guess the most difficult part would be marinating the pork rib…. and squeezing orange without proper equipment. Haha… As for Brian.. hemmm.. he is doing the Bake Tomato with baby leek and Balsamic Vinegar (Jamie Oliver style). Sounds interesting? Yeah… everyone seems to cook something that could compliment to each other stuff. Each busy trying to finish their masterpiece. Brian stay around his microwave as his food require only that… while me and Gigi was busy walking around the stove… frying, boiling and doing everything else. When we are almost done, Jon and June arrive. Jon brought some cheese sausage while June prepared some sandwiches from home and even brought dessert. Awww… a complete meal. Hehe… June didn’t feel good for not cooking anything since it was a cooking project hence… she did something from home. How sweet rite? We took some pictures, have some wine and started to dig in to our delicious dinner. It was all just so lovely and nice. We finish almost everything. No kidding… haha… are we hungry or what! We then clean up the place… sat down in the living room and chit chat. Suddenly…. Jon suggested that we go Genting… woohoo!!! Of course we all say OKAY! I mean like since when going out is not okay! It’s been a while~ hahaha… yes… I shall blog about it in the next post~ |
